Chocolate Espresso Buttercream Cupcakes

It's time for a sweet treat, coven! This week we enjoyed chocolate cupcakes with espresso buttercream frosting and they were pretty dang delicious. They were also quite easy to make! 🧁⁣

For the cake: ⁣
6 tsp flour ⁣
4 tsp sugar ⁣
1/4 tsp baking powder ⁣
1 tsp cocoa ⁣
1/2 tsp vegetable oil ⁣
pinch of salt ⁣
6 tsp milk ⁣

Preheat Easy Bake Oven 15 minutes. Mix together flour, sugar, salt, baking powder, cocoa and oil (this recipe actually calls for shortening, but I didn't have any so I substituted with oil and it was totally fine!) Stir in milk until smooth. Pour into a greased pan. Bake in Easy Bake oven for 12 to 15 minutes⁣

For the icing: ⁣
1/2 cup softened butter ⁣
1 1/4 cup powdered sugar⁣
3/4 tsp vanilla extract ⁣
3/4 tsp espresso powder ⁣
1/2 tsp cocoa powder ⁣

In a small bowl, whisk the espresso powder into the vanilla until dissolved; set aside. Whisk the butter with a fork until it's smooth, and then add the powdered sugar a little at a time, waiting until it is mostly incorporated before adding more. Once all of the powdered sugar has been added, add the espresso and vanilla mixture and continue to mix until it is completely incorporated. Spread onto your cupcakes, and voila! You will have way more icing than you need, so you have our permission to eat spoonfuls of it if that's what gets you through the rest of the week.😉 ⁣
