Ep. 29 Strawberry Shortcake

Hello dear coven. This week has been so hard, and it feels silly posting about something as unimportant as an easy bake oven recipe. That being said, we all need something sweet in our lives during times like this. Maybe bake a little treat for a neighbor or someone you love, and spread some kindness. We all need to take good care of each other right now. ⁣
These tiny bite-sized strawberry shortcakes are delicious and surprisingly easy to make! This recipe is for a regular sized batch, so you will definitely have plenty to share. ⁣

1 and 1/2 pounds strawberries ⁣
5 tbsp sugar ⁣
2 cups flour ⁣
2 tsp baking powder ⁣
1/4 tsp baking soda⁣
3/4 tsp salt ⁣
1 1/2 cups heavy cream ⁣

Slice up strawberries and mix in a bowl with 3 tbsp sugar. Let set in the fridge for an hour or two. In a medium bowl, stir together the flour, baking powder, baking soda, remaining 2 tablespoons sugar, and salt. Add heavy cream and mix until just combined. Roll mixture into tiny balls and bake in a muffin tin in your EBC for 10 minutes, or a conventional oven at 400 for 18-20 minutes (you can use an 8 inch square pan in an oven.) ⁣

Make whipped cream with 1 1/2 cups heavy cream, 3 tablespoons sugar, and 1 1/2 teaspoons vanilla extract. Once the shortcake has cooled, cut the tiny cakes in half and spoon some whipped cream and strawberries onto each piece. Enjoy with a friend, or all by yourself if that's what you need this week 🍓🍰♥️⁣
