Ep. 30 Chocolate Raspberry Cupcakes

Okay, these were soo yum. You can make these delicious chocolate cupcakes in an Easy Bake Oven or in your conventional oven just fine.

This recipe makes quite a few, so it might be quicker to use your OG oven, but if you’re a glutton for punishment, you go on and hang out with your EBO all day. 🙃

- 2/3 c and 1 T flour
- 1/3 c and 1 large T cocoa powder 
- 1 and 3/4 tsp baking powder
- 1/4 tsp salt
- 1/3 cup plus 1 T brown sugar
- 3 T and 1 tsp white sugar
- 3 T softened unsalted butter 
- 1 egg
- 1 tsp vanilla extract
- 1/3 cup plus 1 T strong coffee
- 1/3 cup and 1 T milk 

Mix together your dry ingredients and wet ingredients separately, and then mix together slowly. I went against baking standards and just mixed it all together at once. 🙃

If you’re using a conventional oven, turn it to 350 and grease your muffin pans. Pop these tiny muffins in for 8-10 minutes and once they’re done, press your thumb into them to make an impression and then stuff a fresh raspberry in there. And if you’re feeling really fancy, pour a smidgen of chocolate syrup to make it really decadent.
